Ingredients

  • 4 Boneless skinless chicken breasts
  • 8 Slices of bacon cooked until crispy
  • 1 cup Shredded cheddar cheese
  • ¼ cup Honey
  • 2 tbsp Dijon mustard
  • ½ cup Mayonnaise
  • 1 tbsp Olive oil
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Instructions

  • Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown, about 6-8 minutes per side, or until fully cooked (internal temperature of 165°F).
  • Prepare Honey Mustard Sauce: In a small bowl, whisk together honey, Dijon mustard, and mayonnaise until smooth. Set aside.
  • Layer the Chicken: Place the cooked chicken breasts on a baking sheet. Spread a generous layer of the honey mustard sauce on each chicken breast, then top with 2 slices of crispy bacon.
  • Add the Cheese: Sprinkle shredded cheddar cheese evenly over each piece of chicken and bacon.
  • Bake: Preheat your oven to 375°F. Bake the chicken in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle with fresh parsley if desired, then serve hot.

Notes

  • You can use any kind of cheese you like, though cheddar pairs wonderfully with the honey mustard flavor.
  • Feel free to swap the mayonnaise with Greek yogurt for a lighter version of the honey mustard sauce.
