Ingredients
1 whole chicken (about 3-4 lbs)
8 cups chicken broth
2 cups all-purpose flour
3 large eggs
1 tsp salt
1/4 tsp black pepper
2 tbsp butter
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
2 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
Fresh parsley, chopped (for garnish)
Instructions
Prepare the Chicken: In a large pot, place the whole chicken and cover with chicken broth. After bringing to a boil, lower the heat and simmer the chicken for 45 minutes, or until it is thoroughly cooked. Remove the chicken, let it cool, and shred the meat.
Make the Noodles: In a mixing bowl, combine flour, eggs, salt, and pepper. Knead until a dough forms, then roll out thinly on a floured surface. Cut into strips and set aside.
