Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 8 cups chicken broth
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken: In a large pot, place the whole chicken and cover with chicken broth. After bringing to a boil, lower the heat and simmer the chicken for 45 minutes, or until it is thoroughly cooked. Remove the chicken, let it cool, and shred the meat.
  • Make the Noodles: In a mixing bowl, combine flour, eggs, salt, and pepper. Knead until a dough forms, then roll out thinly on a floured surface. Cut into strips and set aside.
  • Cook the Vegetables: In the same pot, melt butter and sauté onion, carrots, celery, and garlic until softened. Add thyme and bay leaf.
  • Add the chicken shreds back into the pot and simmer. Add the homemade noodles and simmer for 10-15 minutes, or until the noodles are tender.

Notes

  • For a quicker version, use store-bought egg noodles.
  • Adjust seasoning to taste.
