Place the vegetables on the griddle and cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.
Once the chicken and vegetables are cooked, remove them from the griddle and let the chicken rest for a few minutes.
Slice the chicken and serve it alongside the grilled vegetables. Garnish with fresh parsley if desired.
