Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 1 onion sliced
  • 1 tablespoon balsamic vinegar
  • Fresh parsley for garnish optional

Instructions

  • Preheat your Blackstone griddle on medium heat for 5-10 minutes.
  • While the griddle is heating up, prepare the chicken breasts by seasoning them with olive oil, garlic powder, paprika, salt, and black pepper.
  • Once the griddle is hot, place the chicken breasts on it and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
  • In a separate bowl, toss the sliced vegetables with olive oil, balsamic vinegar, salt, and pepper.
  • Place the vegetables on the griddle and cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.
  • Once the chicken and vegetables are cooked, remove them from the griddle and let the chicken rest for a few minutes.
  • Slice the chicken and serve it alongside the grilled vegetables. Garnish with fresh parsley if desired.

Notes

  • You can substitute the chicken with other proteins like steak or shrimp.
  • Feel free to add additional vegetables like mushrooms or asparagus.
