Ingredients

  • 2 pounds boneless beef short ribs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 cup red wine optional, for deeper flavor
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • 1 teaspoon fresh rosemary leaves or ½ teaspoon dried rosemary
  • 1 bay leaf
  • Fresh parsley chopped (for garnish)

Instructions

  • Prepare the Meat: Season boneless beef short ribs with salt and pepper.
  • Sear the Meat: Heat olive oil in a skillet over medium-high heat. Sear short ribs for 2-3 minutes per side until browned, then set aside.
  • Cook Aromatics: In the same skillet, sauté onions until soft (about 5 minutes), then add garlic and sauté for 1 more minute.
  • Deglaze the Pan: If using, add red wine and scrape the pan, simmering for 2 minutes.
  • Add Ingredients: Stir in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
  • Braise: Return short ribs to the skillet, cover, and simmer on low for 2.5 to 3 hours until tender.
  • Serve: Remove bay leaf and garnish with chopped parsley before serving.

Notes

  • For an extra touch of flavor, try adding a tablespoon of balsamic vinegar before braising.
  • To make the dish richer, consider substituting part of the beef broth with mushroom or vegetable broth.
