Ingredients

Brownie Layer:

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Cookie Layer:

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

Step 1: Prepare the Brownie Layer

  • Preheat the oven to 350°F (175°C). To prepare an 8x8-inch baking pan, either grease it thoroughly or line it with parchment paper.
  • In a medium bowl, whisk together melted butter and sugar until smooth.
  • Add eggs and vanilla extract; mix until fully incorporated.
  • Sift in cocoa powder, flour, baking powder, and salt. Stir gently until just combined. Do not overmix.
  • Transfer the brownie batter into the prepared pan, ensuring it is spread evenly.

Step 2: Prepare the Cookie Layer

  • In another bowl, combine softened butter, brown sugar, and granulated sugar, and mix until the mixture is light and fluffy.
  • Add the egg and vanilla extract, mixing well.
  • Gradually mix in flour, baking soda, and salt until combined.
  • Fold in the chocolate chips.
  • Drop spoonfuls of the cookie dough over the brownie batter, gently spreading to cover most of the surface.

Step 3: Bake and Cool

  • Place the baking pan in the oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brookies to cool in the pan for at least 15-20 minutes before cutting them into squares.

Notes

  • Do not overbake; brookies are best when slightly gooey in the center.
  • For easy removal, use parchment paper and leave overhangs on two sides.
  • Add nuts, caramel, or extra chocolate chips for a decadent twist.
