In a large pot, add chicken pieces and water. Bring to a boil, skimming off any foam.
Lower the heat and add the onion, garlic, and bay leaf. Simmer for 20 minutes.
Add carrots, potatoes, and corn to the pot. Cook for 10 minutes.
Stir in the zucchini and simmer for an additional 10 minutes, or until all vegetables are tender.
Season with salt and adjust to taste.
Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
