Caldo de Pollo Recipe

Ingredients

  • 1 whole chicken cut into pieces
  • 8 cups water
  • 2 ears of corn cut into thirds
  • 2 carrots peeled and sliced
  • 2 zucchinis sliced
  • 1 potato peeled and cubed
  • ½ white onion diced
  • 3 garlic cloves minced
  • 1 bay leaf
  • 1 teaspoon salt (or to taste)
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Instructions

  • In a large pot, add chicken pieces and water. Bring to a boil, skimming off any foam.
  • Lower the heat and add the onion, garlic, and bay leaf. Simmer for 20 minutes.
  • Add carrots, potatoes, and corn to the pot. Cook for 10 minutes.
  • Stir in the zucchini and simmer for an additional 10 minutes, or until all vegetables are tender.
  • Season with salt and adjust to taste.
  • Serve hot, garnished with fresh cilantro and a squeeze of lime juice.

Notes

  • For extra flavor, add a touch of cumin or a pinch of chili powder to the broth.
