Ingredients

  • 2 cups cooked chicken shredded
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream optional, for serving
  • Fresh cilantro chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the shredded chicken, taco seasoning, salsa, black beans, and corn until well combined.
  • Evenly distribute the mixture in a baking dish that has been oiled.
  • Sprinkle the shredded cheese on top, followed by the crushed tortilla chips.
  • The cheese should be melted and bubbling after 20 to 25 minutes of baking.
  • After taking it out of the oven, give it five minutes to cool.
  • If desired, serve with sour cream after garnishing with fresh cilantro.

Notes

  • For a spicier kick, use hot salsa or add diced jalapeño.
  • Substitute chicken with ground beef or turkey for a different twist.
