Prep Time 10 minutes minutes Cook Time 13 minutes minutes Total Time 23 minutes minutes
- 1 cup Cottage cheese
- 3 Large eggs
- ½ cup All-purpose flour
- 1 teaspoon Baking powder
- 1 teaspoon Sugar
- ½ teaspoon Vanilla extract
- Pinch of salt
- Butter or oil for frying
In a large mixing bowl, whisk the cottage cheese and eggs together until smooth and well blended.
In a separate bowl, combine the flour, baking powder, sugar, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing; a few lumps are perfectly fine.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
Remember to pour about 1/4 cup of batter onto the skillet for each pancake. Cook each pancake for 2-3 minutes or until bubbles form on the surface.
Flip the pancakes and cook for another 2-3 minutes until they are golden brown and fully cooked.
Enjoy with your preferred toppings while warm.
- For a fluffier texture, let the batter rest for 5-10 minutes before cooking.
- Adjust the sugar to your taste or substitute with honey or maple syrup.
