Ingredients

  • 1 cup Cottage cheese
  • 3 Large eggs
  • ½ cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Sugar
  • ½ teaspoon Vanilla extract
  • Pinch of salt
  • Butter or oil for frying

Instructions

  • In a large mixing bowl, whisk the cottage cheese and eggs together until smooth and well blended.
  • In a separate bowl, combine the flour, baking powder, sugar, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing; a few lumps are perfectly fine.
  • Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  • Remember to pour about 1/4 cup of batter onto the skillet for each pancake. Cook each pancake for 2-3 minutes or until bubbles form on the surface.
  • Flip the pancakes and cook for another 2-3 minutes until they are golden brown and fully cooked.
  • Enjoy with your preferred toppings while warm.

Notes

  • For a fluffier texture, let the batter rest for 5-10 minutes before cooking.
  • Adjust the sugar to your taste or substitute with honey or maple syrup.
