Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups eggnog
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions

  • Begin by preheating the waffle iron in accordance with the manufacturer's guidelines.
  • In a large mixing bowl, combine the flour, sugar, baking powder, salt, nutmeg, and cinnamon, whisking them together thoroughly.
  • In another bowl, mix the eggnog, eggs, melted butter, and vanilla extract until well blended.
  • Slowly incorporate the wet mixture into the dry ingredients, stirring gently until just combined to avoid overmixing.
  • Lightly coat the waffle iron with cooking spray or butter.
  • Pour approximately 1/2 cup of batter onto the preheated waffle iron for each waffle.
  • Cook the waffles until they achieve a golden brown and crisp texture, which should take about 3 to 4 minutes.
  • Serve the waffles warm, accompanied by your preferred toppings, such as whipped cream, maple syrup, or a sprinkle of powdered sugar.

Notes

  • For a lighter version, use low-fat eggnog.
  • If you don’t have eggnog, you can substitute it with a mixture of milk, cream, sugar, and spices.
