Ingredients

  • 2 large chicken breasts boneless, skinless
  • 4 large tortillas whole wheat or regular
  • 1 cup lettuce chopped
  • ½ cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ½ cup shredded cheese cheddar or mozzarella
  • ¼ cup Greek yogurt or mayonnaise
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of ½ a lemon

Instructions

  • Brine the Chicken (Optional): Mix water, salt, and a bit of sugar in a bowl. Submerge chicken breasts for 15-30 minutes to retain moisture.
  • Marinate the Chicken: Combine olive oil, paprika, garlic powder, salt, black pepper, and lemon juice. Coat the chicken breasts and allow them to marinate for a minimum of 10 minutes.
  • Grill the Chicken: Preheat a grill pan over medium-high heat. Grill chicken for 6-8 minutes per side until golden and cooked through. Let rest for 5 minutes, then slice.
  • Prepare the Wrap Fillings: Lay tortillas flat and add lettuce, tomatoes, onions, shredded cheese, and grilled chicken strips.
  • Add Sauce: Spread Greek yogurt or mayonnaise over the fillings.
  • Wrap It Up: Fold the sides of the tortilla inward and roll tightly from the bottom.
  • Serve: Cut the wrap in half and enjoy!

Notes

  • To make this gluten-free, use gluten-free tortillas.
  • For a spicier version, add sriracha or chili flakes to the sauce.
