Ingredients

  • 2 boneless, skinless chicken breasts thinly sliced
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes adjust to taste
  • 12 oz pasta fettuccine or your favorite type
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Prepare the Pasta: Bring a pot of salted water to a boil and cook the pasta until it reaches an al dente texture. Drain and set aside.
  • Prepare the Chicken: Season chicken breasts with salt, pepper, and thyme. Sear in olive oil over medium heat for 4-5 minutes per side until golden and cooked through. Remove and let rest.
  • Make the Sauce: In the same skillet, sauté minced garlic for 1-2 minutes. Incorporate chicken broth and heavy cream, then allow the mixture to simmer for a duration of five minutes.
  • Add Cheese and Spice: Stir in Parmesan cheese and red pepper flakes, adjusting seasoning as needed until the sauce thickens.
  • Combine and Serve: Slice the chicken and add it to the sauce with the pasta. Toss to coat, garnish with fresh basil, and serve hot.

Notes

  • For a richer flavor, substitute half the Parmesan with Pecorino Romano.
