Ingredients

  • 1 (14.75 oz) can of pink salmon drained and flaked
  • 1/4 cup finely diced onion
  • 1/4 cup breadcrumbs or crackers, crushed
  • 1 large egg, beaten
  • 1 tablespoon mayonnaise
  • 1 tablespoon fresh parsley chopped (or 1/2 teaspoon dried parsley)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 2-3 tablespoons oil (for frying)

Instructions

  • In a large bowl, mix salmon, onion, breadcrumbs, egg, mayonnaise, parsley, salt, pepper, garlic powder, and lemon juice until combined.
  • Divide the mixture into four equal parts and form each part into patties that are 1/2 inch thick.
  • Heat oil in a skillet over medium heat and cook the patties for 4-5 minutes on each side until golden brown and crispy. Move the item to a plate lined with paper towels to absorb any excess oil.
  • Serve warm, optionally garnished with parsley or lemon juice.

Notes

  • For a crunchier texture, coat each patty lightly in breadcrumbs before frying.
  • Canned salmon often contains bones; you can leave them for added calcium or remove them based on your preference.
