In a large bowl, mix salmon, onion, breadcrumbs, egg, mayonnaise, parsley, salt, pepper, garlic powder, and lemon juice until combined.
Divide the mixture into four equal parts and form each part into patties that are 1/2 inch thick.
Heat oil in a skillet over medium heat and cook the patties for 4-5 minutes on each side until golden brown and crispy. Move the item to a plate lined with paper towels to absorb any excess oil.
Serve warm, optionally garnished with parsley or lemon juice.
Notes
For a crunchier texture, coat each patty lightly in breadcrumbs before frying.
Canned salmon often contains bones; you can leave them for added calcium or remove them based on your preference.
