Ingredients

  • 4 boneless skinless chicken thighs
  • 4 medium potatoes cut into wedges
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the potato wedges with 2 tablespoons of olive oil, half the minced garlic, thyme, rosemary, paprika, salt, and pepper.
  • On a baking sheet, arrange the potatoes in a single layer.
  • In the same bowl, coat the chicken thighs with the remaining olive oil, garlic, and seasonings.
  • Place the chicken thighs on the baking sheet alongside the potatoes.
  • Bake for 35-40 minutes, flipping the potatoes halfway through, until the chicken is cooked through and the potatoes are golden and crispy.
  • Garnish with fresh parsley and serve hot.

Notes

  • For extra crispiness, broil the dish for 2-3 minutes at the end of cooking.
  • Substitute sweet potatoes for a healthier twist.
