In the same bowl, coat the chicken thighs with the remaining olive oil, garlic, and seasonings.
Place the chicken thighs on the baking sheet alongside the potatoes.
Bake for 35-40 minutes, flipping the potatoes halfway through, until the chicken is cooked through and the potatoes are golden and crispy.
Garnish with fresh parsley and serve hot.
