Pastina Soup Recipe​

A warm and comforting Italian soup made with tiny pasta, broth, and simple seasonings, perfect for any occasion.

Ingredients

  • 4 cups chicken broth or vegetable broth
  • 1 cup pastina pasta
  • 1 egg
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp butter
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • Fresh parsley for garnish

Instructions

  • Bring the broth to a gentle boil in a pot.
  • Add the pasta and cook according to package instructions (about 5-6 minutes).
  • In a small bowl, whisk the egg with Parmesan cheese.
  • Reduce heat to low and slowly drizzle the egg mixture into the soup while stirring continuously.
  • Stir in butter, salt, and pepper. Let simmer for another 1-2 minutes.
  • Remove from heat and garnish with fresh parsley.
  • Serve warm and enjoy!

Notes

  • For a richer flavor, use homemade chicken broth.
  • Adjust the consistency by adding more or less broth.
  • You can add shredded chicken or vegetables for a heartier meal.
