Ingredients

  • 1 Pound of Velveeta cheese cubed
  • 1 Can of Rotel diced tomatoes with green chilies 10 oz
  • 1 Pound of ground beef or substitute with ground sausage for a twist
  • Diced onions, garlic powder chili powder for added flavor Optional

Instructions

  • Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned and fully cooked through. If you're using sausage, follow the same process. Drain any excess fat.
  • Add Velveeta and Rotel: Lower the heat to medium-low, and add the cubed Velveeta cheese to the skillet. Stir occasionally to help melt the cheese evenly.
  • Mix in the Rotel Tomatoes: Once the cheese starts to melt, stir in the can of Rotel diced tomatoes (undrained). Mix thoroughly until all ingredients are combined into a creamy, smooth dip.
  • Season (Optional): For a little extra flavor, add some garlic powder, chili powder, or diced onions. Adjust the seasonings to taste.
  • Serve Hot: Transfer the dip to a serving bowl or leave it in a slow cooker on a low setting to keep it warm throughout your event. Serve with tortilla chips, crackers, or fresh veggies.

Notes

  • Spice Level: If you prefer a milder dip, use a can of mild Rotel tomatoes. For extra heat, try a can of Rotel Hot or add diced jalapeños.
