Ingredients

  • 2 cups shredded rotisserie chicken skin removed
  • 12 oz pasta penne, fettuccine, or your favorite variety
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ¼ cup fresh parsley chopped (for garnish)

Instructions

  • Begin by cooking the pasta according to the instructions provided on the package. Once cooked, drain the pasta and set it aside, ensuring to reserve ½ cup of the pasta water.
  • Next, prepare the sauce by heating olive oil in a large skillet over medium heat. Add the minced garlic and sauté it until it becomes fragrant, which should take approximately 1 minute.
  • To create the base of the sauce, stir in heavy cream along with chicken broth. Allow the mixture to reach a gentle simmer, then incorporate Italian seasoning, salt, and pepper to taste.
  • Proceed to add the Parmesan cheese gradually, whisking it in until the sauce achieves a smooth and creamy consistency.
  • Combine the ingredients by adding the shredded rotisserie chicken to the sauce, heating it through. Then, introduce the cooked pasta, ensuring it is well coated with the sauce. If necessary, adjust the consistency using the reserved pasta water.
  • Finally, garnish the dish with fresh parsley and additional Parmesan cheese. Serve immediately and savor the flavors.

Notes

  • For a healthier twist, substitute heavy cream with half-and-half or Greek yogurt.
  • Add a pinch of red pepper flakes for a spicy kick.
