Ingredients

  • 1 lb (450 g) mixed seafood shrimp, fish fillets, mussels, and squid
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 cup fish or chicken stock
  • 1 cup coconut milk optional for a creamy version
  • 1 teaspoon fresh ginger grated
  • 1 medium carrot sliced
  • 1 small zucchini diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  • Begin by heating olive oil in a large pot over medium heat. Introduce the chopped onion and garlic, sautéing them until they become aromatic.
  • Incorporate the ginger, paprika, and cayenne pepper, allowing them to cook for one minute to enhance their flavors.
  • Add the diced tomatoes and continue cooking until they are softened.
  • Pour in the fish or chicken stock and allow the mixture to reach a simmer. Introduce the carrot and zucchini, cooking for 5 to 7 minutes until they are tender.
  • Carefully add the mixed seafood to the pot. If you are using coconut milk, incorporate it at this point. Let the mixture simmer for 8 to 10 minutes until the seafood is thoroughly cooked.
  • Modify the seasoning by adding salt and pepper to suit your taste. Before serving, garnish with fresh cilantro or parsley.

Notes

  • Serve with crusty bread or over steamed rice for a heartier meal.
