Southern Swamp Soup Recipe

Ingredients

  • 1 lb smoked sausage sliced
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 celery stalks chopped
  • 1 green bell pepper diced
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup okra sliced
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 1 tsp cayenne pepper optional, for heat
  • Salt and pepper to taste
  • 2 cups cooked rice for serving
  • Fresh parsley chopped (for garnish)

Instructions

  • Over medium heat, warm the olive oil in a large pot. Cook the smoked sausage for approximately five minutes, or until it is browned. Remove and set aside.
  • In the same pot, add the onion, celery, and bell pepper. Sauté until softened, about 5 minutes.
  • Stir in the garlic, smoked paprika, thyme, and cayenne pepper. Cook for 1 minute until fragrant.
  • Pour in the chicken broth and diced tomatoes. Once it reaches a boil, lower the heat and simmer for 20 minutes.
  • Add the okra and cooked sausage to the pot. Simmer for an additional 10 minutes.
  • Season with salt and pepper to taste.
  • Top with freshly chopped parsley and serve over cooked rice.

Notes

  • Mash some of the vegetables with a spoon before serving for a thicker soup.
  • Adjust the level of cayenne pepper to suit your spice preference.
