Swamp Soup Recipe

- 1 tablespoon olive oil
- 1 pound smoked sausage sliced
- 1 medium onion diced
- 2 cloves garlic minced
- 1 can (15 ounces) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 can (15 ounces) white beans drained and rinsed
- 3 cups fresh kale or spinach chopped
- 1 teaspoon smoked paprika
- ½ teaspoon chili flakes optional
- Salt and pepper to taste
Warm olive oil in a spacious pot over medium heat. Incorporate the sliced sausage and sauté until it achieves a browned appearance.
Stir in the diced onion and garlic. Cook for 2-3 minutes until fragrant.
Add the diced tomatoes, broth, and white beans. Stir well.
Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
Add the chopped kale or spinach, smoked paprika, and chili flakes. Simmer for another 5 minutes until the greens are tender.
Season with salt and pepper to taste. Serve immediately alongside crusty bread or, if preferred, over a bed of rice.
- For a vegetarian version, omit the sausage and double the beans.
- Adjust the spice level by increasing or reducing the chili flakes.
