Swamp Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage sliced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can (15 ounces) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 can (15 ounces) white beans drained and rinsed
  • 3 cups fresh kale or spinach chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes optional
  • Salt and pepper to taste

Instructions

  • Warm olive oil in a spacious pot over medium heat. Incorporate the sliced sausage and sauté until it achieves a browned appearance.
  • Stir in the diced onion and garlic. Cook for 2-3 minutes until fragrant.
  • Add the diced tomatoes, broth, and white beans. Stir well.
  • Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  • Add the chopped kale or spinach, smoked paprika, and chili flakes. Simmer for another 5 minutes until the greens are tender.
  • Season with salt and pepper to taste. Serve immediately alongside crusty bread or, if preferred, over a bed of rice.

Notes

  • For a vegetarian version, omit the sausage and double the beans.
  • Adjust the spice level by increasing or reducing the chili flakes.
