Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound turkey sausage casings removed
  • 1 small onion diced
  • 1 red bell pepper diced
  • 6 large eggs
  • 1/4 cup milk or dairy-free alternative
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup shredded cheddar cheese optional
  • Fresh parsley or chives for garnish

Instructions

  • Begin by preheating your oven to 375°F applying and apply grease to a 9x13-inch baking dish.
  • Combine the diced sweet potatoes with olive oil, salt, and pepper. Arrange them uniformly in the baking dish and bake for a duration of 15 minutes.
  • While the sweet potatoes bake, cook the turkey sausage in a skillet over medium heat until browned. Add the onion and bell pepper, cooking until softened.
  • In a bowl, whisk together the eggs, milk, garlic powder, and paprika.
  • Remove the sweet potatoes from the oven and layer the sausage mixture on top. Pour the egg mixture over everything.
  • Sprinkle with cheese (if using) and bake for 20-25 minutes, or until the eggs are set.
  • Garnish with fresh herbs and serve warm.

Notes

  • For a spicier kick, use hot turkey sausage or add a pinch of red pepper flakes.
  • Make it dairy-free by omitting the cheese or using a plant-based alternative.
