Ingredients

  • 1 Lb Ground beef or ground turkey for a lighter option
  • 1 Packet taco seasoning
  • 1 cup Cherry tomatoes halved
  • 1 cup Shredded lettuce
  • 1 cup Corn fresh, frozen, or canned
  • 1 cup Black beans rinsed and drained
  • 1 cup Shredded cheddar cheese
  • 1 Avocado diced
  • 1 cup Tortilla chips crushed
  • Fresh cilantro for garnish
  • Sour cream or Greek yogurt for serving
  • Salsa for serving

Instructions

  • Cook the Meat: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add taco seasoning and water (as directed on the seasoning packet) and stir until well combined. Simmer for about 5 minutes.
  • Prepare the Salad Base: While the meat is cooking, chop the lettuce and halve the cherry tomatoes. In a large salad bowl, combine the shredded lettuce, corn, black beans, and cherry tomatoes.
  • Assemble the Salad: Once the meat is seasoned, let it cool slightly, then add it to the salad bowl. Toss everything together until well combined.
  • Add Toppings: Top the salad with shredded cheddar cheese, diced avocado, and crushed tortilla chips. Garnish with fresh cilantro.
  • Serve: Offer sour cream or Greek yogurt and salsa on the side for drizzling over individual servings.
